BLACK GARLIC AND BLUE CHEESE CROQUETTES

There's nothing like a real old-fashioned recipe. Who doesn't like their mother's croquettes? A topic, and today we bring you the way to surprise our mothers with this recipe. Croquettes like the ones from before but with a totally new touch, the black garlic Bonrostro.
So let's get to work, and then we'll tell you what we need for the production.

NECESSARY INGREDIENTS

We must bear in mind that the ingredients must be divided into two groups, firstly to make the dough and secondly to be able to make the rest of the croquette.

FOR THE MASS

  1. 400ml of milk.
  2. Flour (4 tablespoons well filled).

FOR THE KIBBLE:

  1. Bread crumbs.
  2. 3 cloves of black Bonrostro garlic.
  3. 1 onion.
  4. 150g of blue cheese.
  5. Eggs
  6. Salt.
  7. Olive oil.

ELABORATION, LET'S GET TO WORK!

With the ingredients prepared and the kitchen ready, let's get started with the preparation.
  • First, we cut the onion very small. And fry it in a frying pan with oil at medium heat.
  • When the onion is a golden colour, add the flour and stir well for a minute so that it takes on a little colour.
  • Then we add the milk, little by little, stirring constantly until we get a thick, lump-free béchamel.
  • Now we cut the black Bonrostro garlic into small pieces. Crumble the blue cheese and add it, stirring constantly until the cheese melts./address>
  • We taste and add salt, but carefully, taking into account that the cheese has a strong taste.
  • Bake the dough well, until it is golden and has taken on a shine.
  • We let the dough cool down. Once it is cold, we shape the croquettes. We coat them with egg and breadcrumbs and let them dry for a while.
  • With a pan of hot oil, but not too much, we go on to fry the croquettes. Trying to make sure that they are equally golden all over.
We take out the croquettes and drain them with kitchen paper to remove the excess oil...
¡AND END! We already have some delicious black garlic and blue cheese croquettes. All that remains is to present them and devour them. We can accompany them with an aioli, a mayonnaise or (I recommend it) a raspberry jam and they will be delicious.
