There’s nothing like a real old-fashioned recipe. Who doesn’t like their mother’s croquettes? A cliché, and today we bring you the way to surprise our mothers with this recipe. Croquettes like the old ones but with a totally new touch, the Bonrostro black garlic. So let’s get to work, here’s what we need to make it.
We must bear in mind that the ingredients must be divided into two groups, first to make the dough and then to make the rest of the croquette.
For the dough
- 400ml milk.
- Flour (4 heaped tablespoons).
For the croquettes
- 3 cloves Bonrostro black garlic.
- 1 onion.
- 150g blue cheese.
- Olive oil.
Preparation, let’s get down to work!
With the ingredients prepared and the kitchen ready, let’s get started with the preparation.
- First of all, cut the onion into very small pieces. Fry it in a frying pan with oil over medium heat.
- When the onion is golden brown, add the flour and stir well for a minute to give it some colour.
- Then add the milk little by little, stirring constantly until you have a thick, lump-free béchamel sauce.
- Now chop the Bonrostro black garlic finely. Crumble the blue cheese and add it, stirring constantly until the cheese melts.
- Taste and add salt, but be careful, bearing in mind that cheese has a strong flavour.
- Bake the dough well, until it is golden brown and glossy.
- Leave the dough to cool. Once cold, shape the croquettes. Coat them in egg and breadcrumbs and leave them to dry for a while.
- Fry the croquettes in a frying pan with hot oil, but not too much. Make sure they are equally browned on all sides.
- Remove the croquettes and drain them with kitchen paper to remove the excess oil…
AND END! Now we have delicious black garlic and blue cheese croquettes. All that remains is to present them and devour them. They can be served with aioli, mayonnaise or (I recommend it) raspberry jam and they will be delicious.
